well if it is possible to break free galactus is the one to do it,maybe with the help of his heralds.
Im pretty sure he would be able to break free given as he can affect matter itself with the Power Cosmic. Thats is if he could even be assimilated to begin with.
His Heralds have power enough to halt whatever advances the Borg might attempt on him.
Should they indeed be able to assimilate him, I think it would be game over for the universe.

Not going to happen. Galactus is part of the universe. To him Borg ships would be toys to him. An attempt of assimilation is like getting a Mosquito bite to Galactus. All he has to do his grab a bunch of Borg cubes, spheres, in his hands and crush them. Game over.

The Borg would already percieve Galactus as a Borg,due to the fact that every life form in the universe percieves Galactus to be a larger member of their own species.

But as a question-how would Galactus do against the ST galaxy? all I see is the Q being the only ones to stop him.
I guess the Borg could assimilate the weak pathetic Galactus of the Zombie Universe, in which case they wouldn’t get any advantage since he was…weak and pathetic.
The Borg would proceed to wreak havoc throughout the galaxy, adapting the technology Galactus has for their own use, outfitting every drone and ship with the immense tech that only a being such as Galactus could provide. Not sure how the Power Cosmic would work, unless they could use the Borgified Galactus to make them all heralds, or something.
The Q, upon seeing what havoc the Borg are wreaking, sends Q to the Jean-Luc Picard aboard the Enterprise-E who promptly transports them back 24 hours prior to the assimilation of Galactus, where Picard must use his suave diplomatic charm to convince this purple-planet eater that a race of cyborg zombies wants to OMNOMNOM him. At the end of the episode, Galactus vaporizes any and all incoming Borg and the Enterprise and its crew departs into the starry CGI background.
